Recipe: Chocolate Zucchini Cake

Hey all! I finally posted my family recipe for chocolate zucchini cake over at my page on the Examiner. I had a few emails asking for it, so enjoy!

I find pumpkins and squash such a pain in the butt to peel, which greatly cuts down on my cooking with them. Got a tip as to how to make quick work of it?

I don't peel them. I use a big knife, cut the squash down into cubes and roast it. When it cools, the peels literally slip right off.
