French Friday: Herb Roasted Lamb Chops

It is beginning to really feel like spring around here. Yesterday my newly-painted toes peeped out from my sandals; finally, after weeks of waiting, I had full execution of my spring look. The air is brisk in the morning, but by high afternoon has reached that full-on awkward should-I-take-my-jacket-off-or-not? spring feeling. Lamb feels right now.
These chops were part of a special occasion dinner. Funny how now I can’t remember the occasion but can remember how swooningly tender these were. Bathed in fresh herbs, they’re a real treat. Divide the recipe in half for a perfect dinner a deux, and roast some asparagus alongside the chops at the same time. Pour yourself a Lillet champagne cocktail while you wait, and you pretty much have the makings for a fine spring Friday.
When we next talk on Monday I’ll be a year older–29, my friends! Herb Roasted Lamb Chops
from Bon Appetit
Serves 4
4 large garlic cloves, pressed
1 tablespoon fresh thyme leaves, lightly crushed
1 tablespoon fresh rosemary leaves, lightly crushed
2 teaspoons coarse kosher salt
2 tablespoons extra-virgin olive oil, divided
6 1 1/4-inch-thick lamb loin chops
Mix first 4 ingredients and 1 tablespoon olive oil in large bowl. Add lamb; turn to coat. Let marinate at room temperature at least 30 minutes and up to 1 hour.
Preheat oven to 400°F. Heat remaining 1 tablespoon olive oil in heavy large ovenproof skillet over high heat. Add lamb; cook until browned, about 3 minutes per side. Transfer skillet to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare. Transfer lamb to platter, cover, and let rest 5 minutes.

Thanks for the birthday wishes! I guess what I mean about 29 is that it’s just the last year of something rather than the first year of something new––I’d rather be turning 30! But I’m going to make the absolute most of it. There might be some new beginnings in this year after all!
