Ginger Molasses Cookies

At my yoga studio we are greeted with hot tea and dark, dense bite-sized cookies after class. They are crunchy––my friend says she tastes caramel––with hints of ginger and molasses. They put me in a state.

What I mean to say is that I don’t even think much of molasses cookies ordinarily. I know my dad likes them, and that my mom used to buy the soft-baked kind at Stop & Shop, dusted with fine grains of sugar. There are memories there, but not the kind I’m desperate to revisit; I’m more of a chocolate chip kind of woman.

Those yoga studio cookies changed everything. And while this recipe doesn’t approximate what those cookies are all about, it succeeds at something else: soft, yielding cookies with just the right mix of sugar and spice. They are the most wholesome cookie you could imagine; they ask you to please pour a cup of milk and eat them in your pajamas.

Ginger Molasses Cookies
from King Arthur Flour
Makes 3 dozen cookies

1 cup unsalted butter
1 cup sugar (I used turbinado)
1/2 cup molasses
2 1/4 teaspoons baking soda
1 teaspoon salt
1 1/4 teaspoons ground cinnamon
1 1/4 teaspoons ground cloves
1 teaspoon ground ginger
2 large eggs
3 1/2 cups all-purposed flour
sugar, for coating

Preheat the oven to 350°F. Lightly grease (or line with parchment) two baking sheets.

In a large mixing bowl, cream together the butter and sugar until they’re light and fluffy. Beat in the molasses, baking soda, salt, and spices. Add the eggs, beating well and scraping down the sides of the bowl to make sure everything is incorporated. Stir in the flour.

Scoop the soft dough into 1 ½” balls; a tablespoon cookie scoop works well here. Roll them in granulated sugar, coarse sugar, or pearl sugar. Space the cookies on the prepared baking sheets, leaving about 2 ½” between them. Bake them for 10 minutes. The centers will look soft and puffy; that’s OK.

Remove the cookies from the oven, and cool them on the pan for 10 minutes before transferring them to a rack to cool completely.
