10 Super Fast Summer Sandwiches

I’ve been a bad blogger lately, and I’m feeling pretty guilty about it. Usually I’m brimming over with ideas and recipes and things we have to talk about right now, but lately, maybe it’s midsummer malaise, I’ve got nothing. We’ve been eating tomato sandwiches for dinner every night at my house, and I’ve been watching reality television in front of the air-conditioner. Last week especially, I had that unmistakable feeling of burn out: you just want to zone out until something fills you up.
And here’s what I’ve learned: Seriously, the Real Housewives are almost as good as therapy. When you are caught up in the crazy ass drama of wackadoos, there’s is literally no brain space left for you to worry about your future, your dirty laundry, or your love life. There’s something remarkably freeing about that.
So that’s what I’ve been up to these last several quiet days. I’ve been trying to fill up what feels like an empty cup. And I’ve been making lots and lots of sandwiches, which, as far as I’m concerned just might be the perfect summer supper. At first I hesitated to share these ideas with you, but then I thought, what the heck? You probably feel like slapping some mayo on some bread and calling it dinner every now and then, too. And to that I say: Girl, I feel you.
Super Fast Summer Sandwiches
- prosciutto + arugula + ricotta cheese + drizzle of olive oil
- tomato + mashed avocado + lemon juice + sea salt
- pimento cheese
- smoked salmon + capers + shallots + goat cheese
- tarragon chicken salad
- hummus + cucumber + avocado + sprouts
- tomato + mayo + salt and pepper + sourdough toast
- sardines + frisee + avocado + hardboiled egg
- tuna + parsley + nicoise olives + olive oil + lemon juice
- olive tapenade + goat cheese + roasted red pepper + hardboiled egg + frisee

Victoria Haynes: You read my mind. We found a panini press at a stoop sale (the castoff from an ambitious wedding registry) and have been going to town. Suddenly sandwiches are elevated to the status of a serious dinner option! So many possibilities. The next step is making a big batch of caramelized onions and freezing them in ice cube trays. They’re the bomb on breakfast sandwiches.

Sheree: Lately, I’ve been doing the exact same thing. I’ve never before watched The Hills; I’ve only caught glimpses of their drama-filled lives on the cover of magazines while waiting in line at the grocery store. Well, I was in some sort of mood last weekend and I decided to start with Season 1 since I could stream it for free through Netflix. Well, now I’m almost through Season 3 and, yes, my life doesn’t seem so complicated after all, but, I’ve gotta tell ya, watching it play out on tv can be somewhat addicting. LOL

M @ Pub Diaries: Ok, so I’m a year late on this one but the joy of a sandwich for dinner cannot be underestimated. As a kid Friday teatime (dinner) would be roast beef stotties (a large round Northern English bread cake) with onion, a packet of crisps (or chips depending on what side of the Atlantic you are on), Dandelion and Burdoch (soda) and the afternoon kids movie. It’s carried into aduilt life and there’s nothing better than the 2 minute slap it together dinner that a sandwich offers… After a couple of weeks of London, New York and Lille all I want to do come clocking off is go home and make that roast beef sandwich!21 weeks ago
